Gingerbread Man Cut-Out Cookies Recipe

3/4 cup dark brown sugar, packed
1/2 cup butter, softened
1 large egg
1/3 cup molasses
2 2/3 cups flour
1 teaspoon baking soda
2 teaspoons ginger
1/2 teaspoon salt
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
Non-stick baking spray
							
In a large bowl, cream brown sugar and butter together until fluffy and light. Add egg and molasses; mix well. 
							
In a separate bowl, whisk together flour, baking soda, ginger, salt, allspice, nutmeg and cinnamon; slowly add to the brown sugar mixture. Separate the dough in two pieces and shape into a ball. Cover and refrigerate for at least one hour.
							
Flour the work surface and roll out one section of dough until it is 1/8-inch thick (keep the other half of the dough in the refrigerator until ready to use). Be sure to keep lots of flour on the rolling pin and countertop while rolling out. 
							
Cut out with a 4-inch gingerbread man cookie cutter; flour cookie cutter between cuts. Place gingerbread men 2 inches apart on greased baking sheets.
							
Bake at 350 degrees F about 8 or 9 minutes (edges should be firm). Cool completely on wire racks. Frost with Confectioners? Sugar Icing.
						


Confectioners' Sugar Icing

1/4 cup unsalted butter, softened
2 cups confectioners' sugar
1 teaspoon vanilla extract
3 to 4 tablespoons milk
Food coloring, if desired
							
In a medium bowl, beat butter and confectioners' sugar with an electric mixer on medium-high speed until fluffy and light. Beat in vanilla and 3 tablespoons milk. Add more milk until desired consistency. Tint frosting with food coloring.
						


Light as a Feather Gingerbread Recipe

1/2 cup shortening
1/2 cup boiling water
1/2 cup molasses (light)
1 egg (beaten well)
1/2 cup brown sugar
1 1/2 cups flour
1/2 teaspoon salt
3/4 teaspoon ginger
1/2 teaspoon baking powder
3/4 teaspoon cinnamon
1/2 teaspoon baking soda
							
Cut shortening into chunks; add boiling water. Add molasses, egg and brown sugar. Beat well. 
							
In a separate bowl, mix dry ingredients and add to creamed mixture. Continue beating until creamy. Pour into an 8" square pan and bake at 350 degrees F for 35 to 40 minutes. Line pan with wax paper if you plan to invert the gingerbread on a plate.
						


Glorified Gingerbread Cake Recipe

2 cups flour
1 cup granulated sugar
1/2 cup shortening
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 egg, beaten
1 cup sour milk
2 tablespoons molasses
							
In a bowl, mix like pie crust the flour, sugar, shortening, ginger and cinnamon, making it very fine. Reserve 1/2 cup for topping on cake. 
							
Add baking soda, salt, egg, sour milk and molasses; beat well and pour into pan. Sprinkle reserved 1/2 cup topping over cake. Bake at 350 degrees F for about 45 minutes or until done.
						


Soft Gingerbread Cake Recipe

3 cups whole-wheat flour
1 teaspoon baking soda
1 teaspoon ginger
1 tablespoon cinnamon
1 teaspoon cloves
1/2 teaspoon salt
1 cup brown sugar
1 cup vegetable oil
3 eggs, well beaten
1 cup sour milk
1 cup molasses
							
Sift flour, baking soda, ginger, cinnamon, cloves and salt together twice. Combine in mixing bowl, sugar, oil, eggs, sour milk and molasses. Beat in dry ingredients. Bake at 350 degrees F in a greased and floured 9x13-inch pan for 35 to 45 minutes.
						


Country Apple Gingerbread Skillet Recipe

5 tablespoons unsalted butter
2 pounds tart green apples, peeled, cored and thinly sliced
1/4 cup granulated sugar
1/4 cup whiskey
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon ground cloves
1 tablespoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup unsalted butter
1 cup boiling water
1 1/2 cups molasses
2 eggs
Confectioners' sugar
Whipped cream or ice cream (optional)
							
Melt 5 tablespoons butter in a 12-inch cast-iron skillet over medium heat. Add apples; cook for 10 to 15 minutes or until tender, stirring and tossing frequently. Add granulated sugar; stir as the apples begin to caramelize. Pour in whiskey; shake the pan as the alcohol evaporates. Remove from the heat and set aside. 
							
In a large bowl, combine flour, baking soda, baking powder, cloves, ginger, cinnamon and salt. Set aside. 
							
Add 1/2 cup butter to the boiling water in a separate bowl; let stand until melted. Stir in molasses; beat in eggs. Add the liquid ingredients to the flour mixture, beating until smooth. 
							
Spread the apples over the bottom of skillet into a smooth layer. Oil the side of the skillet. Pour in the gingerbread batter. Bake at 400 degrees F for 30 to 35 minutes or until a knife inserted in the center comes out clean. Cool on a rack for 10 minutes; invert onto a serving plate. 
							
Scrape off any apples sticking to the skillet with a spatula; spread over the gingerbread. You may sprinkle a few drops of whiskey over the apples while warm if desired. Dust the top with confectioners' sugar; serve warm. Garnish with whipped cream or ice cream if desired.
							
Yield: 8 to 10 servings.
